Gunsmithing classes are scheduled at several junior colleges around the country and the one that I have been to for two summers now is in Trinidad Colorado. There are classes in Double Barreled shotguns (Dennis Potter) and engraving, bolt action blueprinting, stock making, checkering, welding and just about every aspect of gunsmithing. The other sites that I am aware of are in California and North Carolina. The classes are a week in duration. At Trinidad, we stay in the dorm and the whole experience is not expensive.
