We in the USA were fortunate to have old "country" gunsmiths that saved old guns that were no longer useable and stripped them of parts to repair other guns. In the late 1800s-early 1900s, inexpensive Belgian double barrel shotguns were popular with farmers and other working people. These old guns were often the ones stripped for parts, including Deeley style latches. Most of these old gunsmiths have passed on and their old saved old parts were either thrown out or kept somewhere in a basement by heirs that don't know what they are for. Some old Spanish double guns also used Deeley style latches, so your task is to find an old Spanish gunsmith or the grandson of one that still has the parts you need stored away somewhere. Failing that, you may be able to buy one from a maker of modern double barrel guns. BTY, in my opinion if you finish your project, you will have a fine rifle that your heirs will be very proud of someday. Spain has a very old tradition of hunting, and I am satisfied that somewhere there is someone that will be happy to help you with your project.

Here in Spain, sadly arms legislation is so so soooooo TIGHT, when a gun is for scrap, you have to take it to the police (Guardia Civil), and they will destroy and MELT it... Yes, melt it. And you cant remove parts easily, at most, secondary parts, but never a "fundamental part", that is the action, bolt, and barrels.
I really doubt I can find a deeley latch in Spain, I would be VERY surprised.
Hopefully, a member of the forum may have and can help me or maybe someone sees it locally or online and can let me know.
I still have he doubt if a normal fore end with the push button, can be transformed to the deeley latch
