The "prion" thing drives me crazy. I have asked every respectable scientist I have ever worked with over the years to explain what a "prion" is to me and have yet to get a good answer. Even animal-- science folks can't seem to answer my questions (which I find hard to believe).
Stan: dying from spongiform encephalitis does not sound like a good way to go to me and if CWD does effect humans...that is how you would end.
Venison might not be universally appreciated (& maybe for good reasons) but...the animals I have harvested out here in Colorado have been excellent tablefare and I serve it to friends and family regularly (& I test every animal now, for going on 20-years). I would greatly miss it if we didn't have some in our freezers (elk is clearly my favorite but mule deer comes in at a fairly close second).
I firmly believe that it's all about how it's harvested, how its processed, and then, of course... how well it's prepared (a good game cook makes all of the difference [for both birds and big game]).
