Dragged 4 carefully-aged birds out of the freezer, thawed them long enough to get them into a sugar/salt brine for 8-10-hours and then I pulled them and deboned them. Yesterday, after church, I got some fairly thin bacon out of the new package and performed the final cleaning and inspection of each breast and trimmed piece (no shot found!) and then wrapped each piece carefully. Grilling occurred after dark, on the 1st day of winter. Pre-dinner drinks were Wisconsin Old Fashioneds for my buddy and his bride (made with brandy & topped w/7-Up). Ours (my wife & I) were more traditional. Dinner was with an Italian pinot gris, wild rice w/mushrooms, & green beans, dessert was deep-chocolate (Callebaut) pots-de-creme. Simple, but effective. Lloyd, Have you ever prepared the breasts as poppers by rolling them around a 1/4 or 1/2 Jalapeno pepper with a piece of mozzarella cheese and then wrapped in bacon as you have done here? Delicious. And quite addicting!! If you do not have any jalapenos just use a nice stick of pepper jack with similar taste results. The big difference will be the texture since there will be no jalapeno "snap".

Also try slipping an apple slice in there instead of the pepper. Served over wild rice, of course.

Nice looking table fare, Lloyd.
If you like your bacon a little more well done, without overcooking the birds, cook the bacon about halfway in the microwave before wrapping it on the birds. I figured this out on doves years ago. By the time the bird is just nice and pink inside the bacon is done perfectly, but not crispy.
