I have three doubles I hunt with and also use for skeet/sporting clays. Two of them are choked skeet/light modified and get the job done very well. One is a 20ga Parker the other an old 16ga Kreighoff (2 1/2" chambers and so light weight only 7/8oz loads are suitable). Both take a lot of quail, dove and last year the 20ga did just fine on South Dakota Pheasant with 1oz loads of 6s. The other double is a modern gun choked IC/Mod and is my principal skeet gun. The tighter chokes just makes me center things a little better and it also works better on sporting clays. I recommend the skeet/lt mod combination for your application.
