Could that S mean that they are steel barrels? The water table is stamped S 30 and the serial # on one side and 18 on the other.

I think you are correct that the S mark meant that the barrels were fluid steel and not T (twist) or D (damascus). Meriden marked these shotguns with the type of barrel and length on the water table.
Additionally, my barrels are marked with a "T" near the fore arm attachment lug whereas those with fluid steel barrels are likely similarly marked with the letter "S". If someone has a higher quality damascus (two or three blade) I would bet money it has the letter D were mine has the letter T, the those with fluid steel have the letter S.
