Questions answered.....

The neck? Proper gutting requires removal of the wind pipe. I cut through neck to access wind pipe...cut that and it comes out from the body cavity with the balance of the lungs with a light tug....etc.

The harness comment - During my youthful years I was an avid rock and ice climber...I won't even go on my house roof without being tied in. So simple to be safe.

I will confess to being slightly paranoid....I am always tied to 2 fixed points...even in my stand.
