Webster isn't a "most comprehensive" dictionary. It's a dictionary made for Americans. Even my little OED says "Catch of gun-lock holding hammer at full or half-cock. I'd be eaten alive without the OED!

I think the term 'water table may have been coined many years ago to describe a surface to take or reference all measurements off for the manufacturing process.
I do not know who the originator was but I believe the Eygtians used a 'Water Table ' as a device for checking the true level of the ground when building the Pyramids.

You are, of course, perfectly free to use any term you like for a reference to anything. English does indeed have a rich history of borrowings and has as a consequence of its adaptability to technology become a world standard. It has also become a morass of near unintelligible utterances by the less than well educated that also has a rich tradition in English. If you decide to employ a term for a particular thing that was generated by the obviously ignorant and promulgated by much the same then you deny the precision and elegance afforded by what may be the finest linguistic tool currently available.

Considering the lowest common denominator goal of education in the US for the last several decades, I find myself not surprised at the content of the discourse here.
