That is a Dorado, Mahi Mahi or Dolphin fish, depending on where ya catch em...I dont keep many, we are catching quite a few now. They are the BEST eating, as long as they are fresh, Broiled over..........Mesquite of course...Kept one today, traded it for a breakfast at Pancho Villas...Barter system is alive and well here...

I have to agree with LD..they are amazingly good eating and as noted elsewhere, they can have some really wild colors going when fresh.

With all of that grain in the turkish walnut, how do you go about determining the wrist area where you would need a straighter grain?

Treb, that's why it's good to pick them in person whenever possible...to make sure the blanks have the correct grain flow through the wrist and the figure in the non structural areas, you can use atemplate but the experienced eye can usually tell by looking at the whole blank...like this one




The taste of poor quality lingers long after the cheap price is forgotten.........
