Well, here's my .02, for what it's worth.
I really like hammer guns and own a couple. The major downside to using hammer guns is inability to use (cheap) modern ammunition and lack of the tang safety most of use are used to. Yes, you can wait for the dog to point then cock both hammers, but I can't do that quickly. I can't cock both hammers with one hand. You could also walk around with the gun broken open then close it when the dog goes on point or bird flushes, but that is less than ideal for the type of hunting I do. So, the CZ would overcome the two major disadvantages to shooting vintage hammer guns.
On the other hand, the reason I like vintage hammer guns is that the quality is hard to beat, as is the feel/handling, and I like the sense of history that goes with shooting a gun that is +/- a century old. You won't get all that with the CZ.
