One of the really interesting recent developments in outdoor programming is "The Wild Within." If you haven't seen it, that may be because its not on any hunting channel, its on the Travel Channel. It's a true field to table show, with every step from the travel, to the hunt, to field dressing and to the table. It's well produced and can be rather intense at times, and it doesn't shy away from potentially controversial things such as showing a Moose being field dressed to trapping for beavers for fur.

Being on the Travel Channel, it reaches a large non hunting audience, and its drawn the attention of "mainstream" entertainment news outlets in metropolitan areas. Will be interesting to see how it does.
