I wouldn't buy a gun from Cole. Buy the gun somewhere else and have him do the work. I have always wanted to have one built and I will eventually.
You can pick up a 686 Onyx 20ga for $1K or so. Then send it Coles and let him restock the gun. I would put another $1000 or more into the wood. For that you can get some drop dead gorgeous stocks. Then, for $300, Coles will change your single trigger to a double trigger.
The biggest problems are in the barrels. You're not likely to find many (or any) 686s 20ga with 30" bbls. You could buy new ones but that would cost another $1500.
If you are willing to accept 28" bbls you can get away with a nice gun for somewhere in the $2300-$2800 range.
