Ditto what Bill said. A lefty's thumb works pretty well either direction. I've heard of guns being built with reverse barrel sequence, reverse toplever, etc, but, it is a waste of time/money to do that.
Just concentrate on getting good stock dimensions in a normal, production gun (that will cost enough, all by itself).
My lefty guns are a Darne 12 (restocked in St. Etienne, France, to my specs, while I watched) a Tobin 16 double (restocked by Randy Murray, in The Dalles, OR) and a passle of Ithaca 37s with lefty safetys. The Ithaca people, by the way, will bend over backward to get you a new model 37 that fits-I just bought a stock from them, and must say, I'm beyond pleased.
Good Luck.
Best,
Ted

PS If you are lefthanded, jOe, why was the rifle photo you posted a righthanded gun, with plastic stock, no less?

Another thing, did you notice how nobody gave you a bunch of crap (like you would do) for posting a photo of a non-double gun?
