I always turn and store my cans/bottles of finish up-side down. This way there is no chance of a film setting up on top of surface.

Using these precautions, I have finishes remain useful for a few years. If the finish is in a can (poly, lacquer etc.), just lay a piece of saran wrap over the surface of the remaing finish. This inhibits air contact. When the finish is in the bottle, I top up the bottle to the cap line with shot. When the product is finished, throw the shot in a nylon stocking and soak in some mineral spirits...shot is good to go again.

To preserve oil finishes, I shoot the can or bottle full of propane from my torch. If you do this gently for a few seconds, it will displace all the air above the liquid level. Put on the cap and forget it. Even if you don't displace all the air, the heavy propane will hug the liquid and prevent oxygen contact. Put out your stogie before attempting this method.
