3 woodcock, halved. Steam for 4 minutes.
Simmer 2 tbsp. butter, 11/2 cup milk, 1/2 cup cream, 2 cloves of garlic crushed and coarsely chopped, 1tsp ground thyme, 1/4 cup brandy or whiskey and 11/2 oz. dried and reconstituted porcini mushrooms. Salt and pepper to taste. Add woodcock halves to cream sauce and bake for 5 minutes. Serve over pasta. Peter

Peter! Glad you called last night, good visiting with you! We are going to try this tonite, with Pheasant, as woodcock are none here. We are a bit confused about whether the Whisky goes in the sauce or the cook...We'll do both..Shot with a Double gun I presume? Thanks for shareing
