I am generally confused by those who bad mouth bear meat and always bothered by those who throw it away.
I have never had a bait bucket bear - but I have also never had anything less than excellent bear...

I am talking $100/lb Iberico Pork here...
Pure Appalachain mountain acorn and hickory fed hog (bear) here...

Bear has been a unamious hit every time I have served it. Smoked Ribs are excellent, steaks in a red wine marinade are wonderful, and burgers are top notch.
This was a hindquarter my Dad brought me over Christmas.
Cured for 2 weeks in a water solution of Prague Powder #1( pink cure) and Kosher salt. and then smoked last weekend.
It was excellent by all measures, you can see the brown area where I did not get a full penetration of the cure, but that brown area is being reworked this evening into a mushroom stroganoff and will do just fine!
P.S. When 10 and 12 year old boys and girls have seconds and don't complain... you know you are doing alright!

I've had bear exactly once and it was spectacular. No easy way to obtain more here but...I'd certainly consider it.

In Alaska if you are near a stream with salmon they will taste fishy most of the year.

Bears are scavengers......and rotting (and I mean rotted to a pasty slimy glob) meat is a delicacy for bears. If they can roll in it, all the better to them. I've eaten bear, and I liked it. But after a trip to Manitoba and watching a bear feed on a dead cow that you could smell downwind a quarter of a mile away, my desire for bear has left me.
