I'm looking for a decent game bag - you know, the netting pocket on the front, canvas body, traditional English (and elsewhere?) sort of thing, but I'd like compartments inside (for separating, say, cartridges - live and spent - lunch, a drink etc), and most of the options I've seen are just one big compartment inside; does anyone know of one on the market? Or will I have to talk to someone and get one made?

Best game bags are English, ones you describe. Best Field bag with pockets & dividers is Filsons made in the USA .

If you mean to upland hunt with it, you might reconsider.
For several year I purchased a variety of leather game bags. I still have four or five. I discovered the classic hunting vest (I use a filson) is still the best solution. The orvis (gokey) leather shell bag still gets some use at sporting clays and if I ever dove shoot, but the rest of them to include the one with netting sit around looking pretty hangiing on hooks in my gunroom gathering dust.
If you are dedicated to getting one and using it, I found the more rigid leather bag that held there opening shape are easier to use. Although not one with netting I found the larger Orvis bag that did not have dividers to have the greatest utility. I discovered the ones with dividers created spaces that were not very usable.

I have made the change from wearing a vest myself, for both hunting and fly fishing. For some reason, if I wear a vest and carry any amount of gear (i.e. weight) in the front of it I end up getting upper back fatigue/pain after an hour or two. It's been like that my whole life. If I wear a bag at my side strapped across one shoulder/chest I don't have that problem. Years ago I made a switch to nice Brady Brothers bags for my fly fishing tackle, and couldn't be happier. For hunting, I generally hunt with muzzleloading guns now, so I wear a shooting bag with a clip on game carrier strap for carrying birds. For the type of bag you want, check out Brady Brothers http://www.bradybags.co.uk/I think they have the style you are looking for. They are somewhat pricey, but the quality is second to none.

That's why I shoot birds. I put them in the back and sides of the vest to redistribute the weight of the shells. Otherwise I'd skip the shells. Then, some days I redistribute weight by missing alot. In the warm weather, I've thought about a wicker fish creel for the quail. But the creels don't usually have divided compartments.
When it's really hot like at the dove openner, I am next to a cooler and simply put the birds in a ziplok in the cooler. The meat is much better when cooled immediately.

Plus 1 on Chuck's method for doves. I usually use a four wheeler to keep up with the birddogs now-a-days, so quail go in the expanded metal birdholder on top of the console of my "bad-boy buggy"....Geo
