I've been thinking for some time of doing this to
a junker/shooter (NON-COLLECTOR) just for the satisfaction
of learning how. Are there any good books that I could
read that walk me through the basics? I have no metal working
skills/experience, but am good with my hands and enjoy making
things better than they were before.
Thanks for any suggestions.

The old timers called this "benched" and this may tell you a lot about it. Many parts were hand polished at the workers bench. I would remind you that they were removing metal to improve fit and finish. If you remove metal on a functioning gun you may improve finish but loose fit.
