I know I'll catch it for this question cause it's been asked 1000 times but can I use 2 3/4"
load data for 2 1/2" loads. I'm planning on roll crimping but can I also use an 8 point if I wanted to. My doubles service load is 8500 psi. The data I'm using is 7000 psi. I did run a search and came up with nothing.

It depends quite a bit on the wad you use.
eg. If the load has 1 oz of shot, then use a ! 1/8 oz or 1 1/4 oz wad. That gives more room for the shot.
You may want to give the wad a bit more pressure as well. Just to get those petals down to the crimp level.
However you can work it so that the powder, wad, shot column is the right length for the shell.

If it fits roll crimped then yes. I doubt it will fit with a 2 1/2 fold crimp.

You should follow the 2 3/4 data exactly save the length of the shell. Note a 2 1/2 roll crimp is almost identical in volume to the 23/4 fold crimp.
